At 21, Brian was working as a bank teller and he got this gig due to his aunt, Karen.
While working here, he realised that he couldn’t continue in this job forever and as he was already thinking of becoming a cook, he decided to get a job in a restaurant.
So, Brian started working as a busboy for three days a week and was working on the guard major station for free for another three days of week.
And within six months, he made a contact with a Michelin star chef and included him on his resume and thanks to this, he got a paid job.
Working as a line cook-
Brian worked as a line cook at Lula Café in Chicago, Illinois and then, in Sepia in Chicago.
He worked in these restaurants for around six years and his background was in fine dining.
Working as a sous-chef-
Then, Brian moved to St. Louis, Missouri and started working as a sous-chef in Niche Food Group.
Thanks to the high pressure, he got burnt out and so, he quit working here.
Then, Brian transitioned into a bread baker and he helped his couple of friends to open a bread bakery by name, Union Loafers Cafe and Bread Bakery in St. Louis.
Eventually, Union Loafers Cafe and Bread Bakery became a restaurant and he was working as a chef there.
Later, Brian worked as a seafood specialist at US Foods.
Working as a consultant chef-
Then, Brian started working as a consultant chef for a food company.
Unfortunately, after working for a few years, he got laid off in 2020 and was on a 90-day furlough.
Starting his YouTube channel-
For a long time, Brian has been inspired by Adam Ragusea to start a YouTube channel.
As he had free time, on 24 March 2020, he started his YouTube channel by name, Weeds and Sardines (later renamed to Brian Lagerstrom).
Initially, Brian named his channel Weeds and Sardines because gardening has been his passion and he has been a home gardener growing vegetables and sardines has been his favourite dish.
Initially, he wanted to showcase both gardening and cooking his garden produce on his channel, so he named his channel as Weeds and Sardines.
But soon, Brian realised that he couldn’t produce great videos on gardening and so, he solely focused on cooking and renamed his channel to Brian Lagerstrom.
He also has a website, Weeds & Sardines.
Becoming a successful YouTuber-
As of March 2022, Brian has more than 300 thousand subscribers on his YouTube channel, Brian Lagerstrom.
His wife, Lauren Adermann also helps him with his channel.
Currently, Brian is a full-time YouTuber.
He is a big fan of Sony cameras and he uses a Sony Alpha 7C camera with Tamron lenses.
Brian resides in St. Louis, Missouri.
