Brian Lagerstrom

Brian Lagerstrom is a cook, and a popular YouTuber.

He has more than 1.1M subscribers on his eponymous YouTube channel.

Brian was a professional chef and baker.


Brian Lagerstrom was born in 1988 in Detroit, Michigan, United States.

His father’s name is also Brian Lagerstrom and his stepmother’s name is Paula Lagerstrom.

Brian has a sister, Jennifer Tennant.


Brian did his schooling from Prairie Ridge High School in Crystal Lake, Illinois.

Then, he studied from Columbia College Chicago in Chicago, Illinois.

His inspirations-

At 19, Brian read a book, ‘Kitchen Confidential: Adventures in the Culinary Underbelly’ by Anthony Bourdain; this book greatly inspired him to start cooking and become a cook.

He started cooking at 22.

Brian was also inspired by Magnus Nilsson, a Swedish chef and Thomas Keller and chefs of Joe Beef.

His chef friends, Matt McGuire, Craig Rivard, Ted Wilson and Sean Turner also inspired him.

The dish that inspired him towards culinary arts was bacon-wrapped chorizo-stuffed dates with spicy red pepper sauce served with a wood fire oven in Avec, a restaurant in Chicago.

Brian was also inspired by the positive atmosphere at Avec.


At 21, Brian was working as a bank teller and he got this gig due to his aunt, Karen.

While working here, he realised that he couldn’t continue in this job forever and as he was already thinking of becoming a cook, he decided to get a job in a restaurant.

So, Brian started working as a busboy for three days a week and was working on the guard major station for free for another three days of week.

And within six months, he made a contact with a Michelin star chef and included him on his resume and thanks to this, he got a paid job.

Working as a line cook-

Brian worked as a line cook at Lula Café in Chicago, Illinois and then, in Sepia in Chicago.

He worked in these restaurants for around six years and his background was in fine dining.

Working as a sous-chef-

Then, Brian moved to St. Louis, Missouri and started working as a sous-chef in Niche Food Group.

Thanks to the high pressure, he got burnt out and so, he quit working here.

Then, Brian transitioned into a bread baker, and he helped his couple of friends to open a bread bakery by the name Union Loafers Cafe and Bread Bakery in St. Louis.

Eventually, Union Loafers Cafe and Bread Bakery became a restaurant, and he was working as a chef there.

Later, Brian worked as a seafood specialist at US Foods.

Working as a consultant chef-

Then, Brian started working as a consultant chef for a food company.

Unfortunately, after working for a few years, he got laid off in 2020 and was on a 90-day furlough.

Starting his YouTube channel-

For a long time, Brian has been inspired by Adam Ragusea to start a YouTube channel.

As he had free time, on 24 March 2020, he started his YouTube channel, ‘Weeds and Sardines’ (later renamed to Brian Lagerstrom).

Initially, Brian named his channel Weeds and Sardines because gardening has been his passion and he has been a home gardener, growing vegetables and sardines has been his favourite dish.

Initially, he wanted to showcase both gardening and cooking his garden produce on his channel, so he named his channel as Weeds and Sardines.

But soon, Brian realised that he couldn’t produce great videos on gardening and so, he solely focused on cooking and renamed his channel after himself.

He has an eponymous website.

Becoming a successful YouTuber-

As of December 2023, Brian has 1.17M subscribers on his YouTube channel.

His wife, Lauren Adermann, also helps him with his channel by editing his videos and also helps him with the administrative tasks.

Currently, Brian is a full-time YouTuber.

He earns from a variety of sources like advertisements on his YouTube videos, affiliate marketing, receiving sponsorships and he also accepts donations on Ko-fi.

He is a big fan of Sony cameras, and he uses a Sony Alpha 7C camera with Tamron lenses.

Brian resides in St. Louis, Missouri.
